Last week I made a delightful dish for a delightfully good time with wonderful people. My friend Christiana is gluten intolerant (check out her blog here, she's an INCREDIBLE cook, take my word, I'm a guinea pig), so I gladly took on the challenge for a healthy alternative to the usual (being pizza or 50 cent mac n cheez, don't judge). The company was too lovely to take any pics of my own, bar this one of (one of) our wine choices. mmmmmmm long-haired mermaid biking cabernet goddess. sold.
Anyways, back to the food. I had never cooked quinoa before but it is just so easy I kick myself for being in the dark about it. Also, I've loved brussel sprouts since I was a little girl helping my dad pick them in his garden, so I picked this brussel sprout and leek quinoa dish. It was so delicious, and paired perfectly with the marinated flank steak. The recipes for the brussel sprout quinoa can be found here and the flank steak marinade here.
